Bajri is also known as Pearl millet and is rich in Protein,fibre, Iron and other nutrients. It takes time to digest due to high fibre in it and keep us fulfilled for long time.
Bajri is used in winters for many food preparation like kheech, rotla,ladoos, vada etc.
Lets check the recepie of this healthiest grain. Bajri kheech can be served with mooli bhaaji, fresh curd or galvaani( called as gulab in rajasthan, made of ghee, jaggery and wheat flour).
1 cup bajri
1/2 cup green moong dal
2 cup water
1 cup milk
Salt to taste
Grind bajri coarsely. Mix moongdal to it
Take a open heavy bottom pan or pressure cooker
Put the mixture,add water and keep stirring on medium flame till one boil comes
Stirring is important as otherwise lumps will form
After one boil, add salt & milk and stirr again
If using pressure cooker, cook till 4 whistles on low flame
If using pan, cover it with lid and keep stirring in between till it is cooked
Serve it hot,putting ghee in it
