Thandai Shrikhand- Innovation

Thandai is an important ingredient after colors in Holi. Without Thandai holi celebration is incomplete.

It is a cold drink in India which is made up of almonds, fennel seeds, watermelon seeds,rose petals, pepper,cardamom, saffron, milk and sugar.

To innovate from a normal thandai recepi, i tried to make “Thandai Shrikhand” It tastes heavenly in hot summer days.

Recepie of Thandai Srikhand


Ingredients

2 Cups Thick hung curd

2 Tbsp Thandai Mix – store-bought or homemade

1 Tsp Rosewater – optional

2 Pinches Yellow Food Color(optional)

1 Tbsp Sweetener of Choice – could be sugar / honey or sugarfree

Garnishing

3 Tbsp Chopped Pistachios

1 Tsp Crushed Saffron

1 Tbsp Dry Rose Petals


 Thandai Mix ingredients- 

2Tbsp Almonds & pinch of saffron (grind them & keep aside)
1 Tbsp Pistachio

1/2 Tbsp Poppy Seeds

1/2 Tbsp Watermelon Seeds

1/8 Tsp Saffron

1 Tsp Cardamom

1 TspBlack Pepper Corns

1 Tsp Dry Sweetener (sugar or sugarfree)

1Tsp Saunf( fennel seeds)

5-7 dry rose leaves
Mix them all & grind them in a mixture in powder form


Preparation 
In a large bowl,mix yogurt, thandai mix,(all ingredients) sweetener, yellow food color(optional, i have not used it) and rosewater for a minute or until everything is combined

Transfer the Srikhand in serving bowls and keep in fridge for a minimum of 15 minutes 

Once ready to serve, decorate with pistachios, saffron and rose-petals

Serve chilled
