Thai Green Curry – A Vegetarian Recepi

As name itself mentions, this dish is originated from Thailand. Thai Curry is made up of coconut milk, curry paste and lot of vegetables.

This is an authentic vegetarian Thai Curry recepi which is easy to make at home from scratch and does not require any packaged curry paste. This recepi has freshly homemade curry paste used and this curry paste gets ready in no time.

This Curry is very ‘Creamy’ still not to rich. It is very aromatic and flavourful and also includes lots of vegetables and is prepared using minimal oil.

Serve it with steamed rice or jasmine rice. You will certainly love it.

Ingredients for thai green paste

1 lemongrass

3/4 cup green coriander

1 stem basil leaves

1 inch galangal( thai ginger or ginger)

1/2 green chilli or thai bird chilli

1 tspn coriander seeds ( roasted)

1tspn cumin seeds ( roasted)

1tspn peppercorn

1 spring onion( green & onion)

1 onion roughly chopped

2-3 cloves garlic

Salt to taste.

Ingredients to make Thai curry

300 ml coconut milk

1 tbspn brown sugar

Salt to taste

1 spoon oil

3-4 Pea brinjal(thai)

4-5Basil leaves

3-4 Thai bird chilli

1 cup Broccoli

1 cup Paneer

1 Onion thickly chopped

1cup Baby corn

1/2 cup green capsicum

1 cup Red & yellow bell pepper

1 Carrot thickly sliced

2 Tomato sliced

1 Brinjal thickly sliced

1/2 Zucchini thickly sliced


Preparation

To start with first we will make thai green paste.To do that first clean the lemon grass, remove the leaf part and dry roots if any

Now add all the ingredients of paste into mixer jar with little water and grind into smooth paste

You only need to use 3-4 spoon of paste,if it is excess then transfer to the jar and store it for next time.Keep the paste aside


Preparation of Thai green Curry

Heat oil and add all vegetables to it.Add salt to it and stir on high heat till the veggies turn tender.Now keep them aside

In another pan add one spoon of oil,heat and add 3-4 spoon of green paste and cook it for 1-2 minutes

Now add a cup of water/ vegetable stock and mix the mixture properly.Add brown sugar and 300 ml coconut milk to it and mix it properly

Stir to combine all ingredients together, now add salt to curry and let it boil on low flame till it gets little thick

Once the mixture gets thick add some torn basil leaves and all saute vegetables to it

Stir the mixture and give one boil to it.Green Thai Curry is ready to serve

Serve it with Steamed Rice
