Beetroot Capsicum Pulao – Healthy One Pot Meal


We all know the health benefits of Beetroot. Beetroot is a great source of fiber,Iron, magnese Potassium and vitamin C. Other than these it helps in improved blood flow, lower blood pressure etc

In our Previous blogs, we have shared many recepies such as beetroot sandwich dhokla, beetroot cutlets, kofta, mirchi pakoda and many more using Beetroot. Today sharing a one Pot meal prepared using beetroot. A very healthy and very easy to make recepi. Not only health benefits, it gives so soothing colours to the dishes too.

Rice is liked by all, adults and kids. If prepared with healthy ingredients then it will be a guilt free indulging. So let’s have a look at a very healthy one pot meal recepi- Beetroot Capsicume Pulao



2 bay leaf

2 laung( cloves)

2 green cardamom

1 big elaichi

4-5 black pepper

1 small piece of cinnamom

1/2 spoon jeera

2 spoon ghee

Other ingredients

2 cups rice( soaked for 15 min)

5-7 cashews

1 onion( thinly sliced)

1 medium size beetroot( half grated/half chopped)

1 medium size capsicum

1 carrot( finely chopped)

1/4 spoon haldi powder

1/4 spoon chilli powder

1/2 spoon garam masala

Salt to taste

Note:- You can add more veggies or replace the one with your choice.


In a pan, heat ghee, fry cashews and take them out of panand keep aside, now add all tadka ingredients to it

Once they splutter,add onion and cook till they change colour.Now add grated and chopped beetroot,cook for minute

Add capsicum and carrot to it. Now add haldi powder,chilli powder and garam masala

Add 4 cups of water( double of rice)Take one boil of water, add rice to it, give a stir and cover it with lid

Cook till the rice are cooked.Your healthy one pot meal is ready

Garnish it with fried cashews and some pomegranate(optional)

Serve with raita, papad, pickle of your choice
