Lasagna or Lasagne is the oldest form of italian pasta It is made of stacked layers of Pasta sheets alternating with fillings of vegetables, cheese and seasonings

Lasagne is easy, delicious and fulfilling one pot meal It can become a party menu and even a brunch menu for family on weekends

There is something special in todays Lasagne Recipe, usually the Lasagne /Pasta sheets are made up of all purpose flour, they are also readily available in market but in todays lasagne recipe we have used homemade Lasagne/Pasta sheets which are made up of wheat flour and qunioa flour Details of making the sheets is mentioned in the recipe

So lets have a look at detailed recipe with step by step explanation

Ingredients for Lasagne sheets(12-15 sheets)

3 cup wheat flour

1/4 cup quinoa flour

Ingredients for filling

2 spoon olive oil

1 bunch spinach

1 cup chopped baby corn/ sweet corn

5-6 tomato puree

1/2 cup chopped capsicum 

1 cup paneer cubes

1/2 cup chopped bell peppers

1 cup chopped mushroom

1/2 cup chopped onion

1/2 spoon chilli powder

1/2 spoon pepper

1/4 spoon thyme

1/4 spoon oregano/pasta mix

Salt to taste

Cheese for layering

Preparation of Lasagne Sheets

In a bowl, mix wheat flour, quinoa flour and make a dough, just like we make of Roti

Make balls of dough and roll it , not too thick, not too thin. Cut the rotis in the shape of Lasagne Sheets

Boil water in a pan( broader one), add salt to it. Once it boiled, put the sheets in boiling water, take care they should go straight else will break in water, also put 2-2 sheets at a time, Boil it for 5 minutes and then dip them in cold water

Repeat the same process for all the sheets. Now once sheets are ready, lets prepare the filling for layers

Preparation of filling

In a pan, heat oil, once heated add chopped onion and saute them for 1/2 minutes,Then add, all chopped veggies ( except paneer)one by one and saute them for few minutes on low flame

Add chilli powder, oregano, pepper , salt and mix it Add tomato puree to the veggies and let it cook covered till the mixture gets thick

Put off the flame and add paneer cubes and mix it

Final layering and baking of Lasagne

Now to layer the lasagne we need one flat microwave safe bowl Put first layer of veggies , so the lasagne sheets do not stick at the base

Now layer it with lasagne sheets, again a layer of filling and then the layer of cheese

Repeat the same set of layering, if you want to avoid too much, you can reduce the amount of cheese in between layers Garnish with some cherry tomatoes and Paneer Cubes

The top most layer of cheese should be properly layered as it will help to keep the lasagne intact when you will cut the pieces Cover the bowl with foil all over tightly

Now once the layers are set, preheat the oven @ 190°c Keep Lasagne for baking, bake @190° for 20 minutes After 20 minutes remove the foil and bake it @200°c for 5-7 minutes or till the upper layer of  cheese get crispy

Let it be in hot oven for few minutes and then your tasty lasagne is ready to cut & serve
