Okra is a very common vegetable available in all seasons and is cooked in almost all household. Okra is a very easy to make veggie and liked by all espeially kids love it a lot
Okra can be made with variations like in tomato gravy, curd gravy or can be served as starters too.
It has many health benefits too like it is rich in magnesium, fiber, antioxidant and vitamins. It also helps in controlling blood sugar and maintaining heart health.
Today I am going to share a very easy yet very unique and tasty recipe of Okra-Capsicum Sabji. As its name says it has Okra and Capsicum flavoured with masalas , chickpea flour and roasted nuts
Ingredients
250 gm – Okra/ Bhindi
1 big or 2 medium capsicum
1/4 cup roasted peanuts
4 spoon roasted besan
4 spoon oil
1/4 spoon hing
1/4 spoon jeera
1/2 spoon chilli powder
1 spoon coriander powder
1/4 spoon haldi powder
1/2 spoon amchur powder/ chaat masala
Salt to taste
Preparation
Wash okra( bhindi) and capsicum properly,Wipe okra and capsicum and cut in four slits
Now in a pan, heat oil, add hing and jeera, when jeera splutters, add okra & capsicum and give a stir
Now add all masalas( except amchur powder) & roasted besan to it. Stir it to mix it properly
Cover with lid so that okra & capsicum gets cooked on low flame
Till then crush the roasted peanuts using mortal pestle/roller, Do not powder it
Okra gets cooked very fast and it is important to retain the green colour of bhindi by not overcooking it
Add peanuts & amchur powder and stir it properly. Put off the flame and keep the lid covered
After 5 minutes, you can open and check by stirring
Serve it with hot chapatis/ Parathas
