Undhiyu – Gujarat Special

Undhiyu is Gujarat’s Special mixed vegetables dish , specially of Surat Region in Gujarat. Undhiyu is derived from a Gujarati word “Undhu” which means upside down, as this vegetable is traditionally cooked upside down in earthern pots, fired from above

This dish is only made in winter season as most of the vegetables used in this dish are available in winters only .Some of them to name are lilva(green tuar),purple yam,surti papdi and many more

I am not gujarati but got to taste this delicacy in one of the gujarati wedding and from then it touched my taste buds. I really loved the taste of it and from then onwards I started asking one of my gujarati friend to treat me with this every year.

After understanding the whole recipe, I thought to give it a try and was very happy with the outcome and when shared with few gujarati friends, I got a big thumps up from them .Its really a worth trying recipe and a dish to relish with family

Ingredients for Undhiyu( serves 5)

 5-7 pieces small brinjal

5-7 pieces of small potatoes

1/2 piece of purple yam

2 ripe banana

2 piece of sakarkand( sweet potato)

2 bunch of green garlic

250 gms of lilva( green tuar)

250 gms surti papdi

250 gms flat beans

1/2 cup oil

1 spoon of ajwain

Ingredients of Undhiyu Masala

2 big cups of green coriander chopped

1 cup of dry coconut flakes

 2 spoon chilli powder

1 spoon haldi powder

2 spoon cumin coriander powder

2 spoon oil

Salt to taste

1 1/2 spoon sugar

Chilli ginger paste

Chopped green garlic

Ingredients of Methi Muthiya

1 cup chopped methi

1 cup wheat flour( normal)

1/4 cup wheat bran

1/4 cup besan or chickpea flour

1 spoon sugar

1/2 spoon chilli powder

1/4 spoon haldi powder

1/4 spoon baking soda

Ginger chilli paste

2-3 spoon oil

Salt to taste

Oil for deep frying

Preparation of Undhiyo

First wash, clean all vegetables. Peel potatoes. Give four cuts to brinjals & potatoes. Peel and cut yam in big squares .Chop green garlic. Take out the seeds of lilva and flat beans.

Now we will make methi muthiyas first. So mix all ingredients of muthiya and make a soft dough using 2-4 spoon of water( as required)

Now shape them in small muthiya( oval/ round) and deep fry them. Keep them aside

Next is to prepare masala. So in a bowl take all the ingredients of masala and mix it properly

In a big pan/ kadhai, heat oil, add hing, ajwain to it Add lilva,flat beans and Papdi to it.Put 2 spoons of prepared masala and half cup water and cook it for 5 minutes with lid covered

Give four slit to brinjal and potatoes and fill the prepared masala in the pockets Now place, brinjal and potatoes in horizontol position on beans in kadhai making layer of veggies

Spread some prepared masala on it,  Next layer it with purple yam and sweet potatoes. Again spread some prepared masala on it

Add two cup of water to it and cover it with lid and pour some water on lid. Let it cook for 25 minutes on low flame,keep checking in between

Till then your house will be filled of aroma ,After 25 minutes,check if potatoes and brinjals are cooked, add bananas and fried muthias as top layer and let it cook for another 10 minutes

Put off the flame and serve it in serving bowl

Traditionally Undhiyu is served with puris and srikhand but it tastes good even with chapattis
